Overview of the Role
Reporting to the Head of Culinary, the Executive Pastry Chef & Instructor is a dual-function role combining leadership of pastry kitchen operations with academic instruction in pastry arts. The successful candidate will spearhead the creation and execution of innovative pastry menus while shaping the next generation of culinary professionals through structured teaching and mentorship.
This role is ideal for a seasoned professional who thrives in both kitchen leadership and academic environments, bringing creativity, precision, and a student-centered approach to the table.
Key Responsibilities
1. Pastry Kitchen Leadership
- Manage and operate the pastry section of the kitchen in collaboration with other chefs.
- Prepare a variety of baked goods including pastries, desserts, and confectionery, using both modern and traditional methods.
- Decorate and present desserts with artistic flair, ensuring professional presentation and taste.
- Develop seasonal menus and experiment with new recipes to reflect emerging trends in pastry arts.
- Oversee the production schedule, stock levels, and procurement of baking ingredients while maintaining budgetary compliance.
- Maintain cleanliness, safety, and hygiene standards in the pastry kitchen.
- Supervise, schedule, and guide junior pastry staff to ensure smooth daily operations.
- Liaise with clients for custom orders or special occasion desserts.
2. Teaching & Academic Support
- Teach pastry and baking courses at diploma level as assigned by the Head of Academic Affairs.
- Design new instructional modules and courses in alignment with industry trends and academic goals.
- Develop course materials including syllabi, schemes of work, and lesson plans.
- Coordinate and administer internal examinations, assessments, and grading.
- Provide mentorship, academic support, and pastoral care to students.
- Participate in faculty seminars and departmental meetings to foster academic collaboration.
- Maintain comprehensive student records including attendance, grades, and progress.
- Contribute to curriculum review and improvements based on student performance and industry developments.
3. Mentorship & Development
- Inspire and guide students to explore their potential in pastry arts.
- Facilitate student exposure to real-world hospitality experiences through live kitchen scenarios and project-based learning.
- Offer career guidance and support to students interested in pursuing pastry and culinary careers globally.

Minimum Education and Experience Requirements
- Diploma in Baking & Pastry or a related field.
- A Bachelor’s Degree in Pastry Arts or related specialization is an added advantage.
- 5–10 years of proven experience in managing the pastry and bakery section of a five-star international hotel.
- Teaching or instructional experience is highly desirable.
- Proficiency in Microsoft Office, particularly PowerPoint for instructional use.
- Demonstrated passion and involvement in the global hospitality industry.
