Job Description

As a Cook at Amref International University, your primary responsibility will be to prepare, cook, and serve quality food that meets our university dining standards, aligns with health and safety regulations, and addresses specific dietary requirements. The Cook will be an integral part of our campus life, helping to create a pleasant and nutritious dining experience for students, staff, and visitors alike.

Key Responsibilities

1. Food Preparation

  • Accurately prepare ingredients and cook meals following standardised recipes and menus provided by the university.
  • Assist in daily kitchen prep to ensure timely meal service.
  • Pre-cut, marinate, and season food items as needed.

2. Cooking

  • Operate kitchen equipment including ovens, stoves, grills, and fryers to prepare a wide variety of dishes.
  • Ensure all meals are cooked to appropriate temperatures and meet food safety guidelines.
  • Monitor food while cooking and adjust heat levels to prevent under or overcooking.

3. Food Safety and Sanitation

  • Strictly adhere to food safety standards, including proper food storage, handling, and temperature control.
  • Maintain a clean and sanitary work environment throughout the food preparation and service processes.
  • Clean and sanitise kitchen surfaces, utensils, and equipment consistently.

4. Menu Execution

  • Follow daily menus precisely and make adjustments based on special dietary needs or campus events.
  • Support recipe modification to suit large-scale production and varied dietary requirements.
  • Provide suggestions for menu enhancements and special dishes.

5. Customer Service

  • Interact courteously with students, staff, and faculty to ensure satisfaction and respond to food-related inquiries.
  • Address dietary needs and accommodate special requests when applicable.
  • Serve food at designated stations with a friendly and efficient attitude.

6. Inventory and Stock Management

  • Monitor food and kitchen inventory levels.
  • Notify the supervisor of low-stock items and participate in restocking procedures.
  • Minimise food waste through portion control and proper storage techniques.

7. Team Collaboration

  • Work cooperatively with kitchen staff, including assistant cooks and cleaners, to maintain smooth kitchen operations.
  • Assist with event catering and large gatherings hosted by the university.
  • Maintain professional communication and a collaborative spirit at all times.

8. Equipment Maintenance

  • Maintain kitchen equipment in clean and proper working condition.
  • Report any equipment malfunctions or hazards to the supervisor promptly.
  • Assist in basic maintenance tasks and cleaning protocols for kitchen tools and machinery.

Job Requirements

To be successful in this role, candidates should meet the following criteria:

  • High School Certificate
  • Certificate in Food and Beverage Production
  • At least one (1) year of culinary experience
  • Solid knowledge of cookery and culinary arts
  • Familiarity with diverse dietary needs and cultural food preferences
  • Strong cooking and kitchen operation skills
  • Excellent teamwork and communication abilities
  • Ability to work in a fast-paced environment and manage multiple responsibilities efficiently
