Key Responsibilities

As the Cook (Garde Manger/Butchery), your role will encompass a broad range of responsibilities that contribute directly to the success of the kitchen operations. You will be expected to:

Butchery & Meat Preparation

  • Prepare specific meat cuts according to menu requirements.
  • Ensure minimal waste during deboning and cutting processes.
  • Maintain consistency and quality in meat portioning and presentation.

Culinary Execution & Collaboration

  • Work closely with the Chef de Partie (Garde Manger) and other kitchen staff to execute the daily menu.
  • Actively contribute to the creation and presentation of cold dishes, meat platters, and related items.
  • Suggest innovative ideas for dish presentation and menu enhancement.

Kitchen Productivity

  • Focus on optimizing productivity by maintaining high standards in both speed and food quality.
  • Propose and help implement new procedures and kitchen rules to streamline processes.

Hygiene & Safety Compliance

  • Adhere strictly to all health, safety, and hygiene standards.
  • Keep the work area clean, organized, and sanitary at all times.
  • Ensure all food preparation activities comply with relevant health and safety regulations.

Quality Management

  • Conform to the institution’s Quality Management Systems.
  • Monitor and improve food preparation techniques based on feedback and observations.

Cross-Functional Support

  • Support the culinary team in other kitchen areas as required.
  • Assist in food prep tasks across different sections during peak hours or staff shortages.

Additional Duties

  • Take on any other roles or tasks assigned by supervisors to ensure smooth kitchen operations.

Required Qualifications & Skills

  • Education: Certificate in Food Production or Culinary Arts.
  • Experience: Minimum of two years of culinary experience in food preparation and food & beverage service, specifically in butchery and cold kitchen environments.
  • Certifications: A valid food handler’s certificate is mandatory.
  • Skill Set:
    • Strong knowledge and hands-on experience in both hot and cold food preparation.
    • Ability to work collaboratively within a team and follow detailed instructions.
    • Commitment to maintaining high standards of hygiene and food safety.
