As the Outlet Manager, you will be entrusted with full operational responsibility for one of our exclusive food and beverage outlets. You will serve as the driving force behind the outlet’s success, managing daily operations, leading a team of professionals, and maintaining the highest standards of guest satisfaction. This role is a fixed-term, full-time engagement based onsite in Nairobi, Kenya.

Position Overview

The Outlet Manager will lead the assigned food and beverage outlet to provide an outstanding guest experience that reflects Kempinski’s luxury standards. Working in close collaboration with the culinary and service teams, the Outlet Manager is expected to uphold the highest level of efficiency, professionalism, and guest engagement while ensuring optimal profitability and team performance.

You will be responsible for managing the restaurant supervisors, head waiters/waitresses, wait staff, hosts/hostesses, and outlet cashiers. Your leadership will be vital in creating an environment of excellence, teamwork, and innovation within the outlet.


Key Responsibilities

Leadership & Team Management

  • Lead by example, consistently reporting to duty punctually and dressed professionally in accordance with the hotel’s grooming and dress standards.
  • Motivate and manage a cohesive team comprising restaurant supervisors, head waiters/waitresses, waiters/waitresses, hosts/hostesses, and cashiers.
  • Ensure all staff maintain courteous and professional behavior and deliver service in alignment with hotel and outlet standards.
  • Assign responsibilities to team members under a multi-tasking framework and monitor their performance regularly.
  • Conduct daily pre-shift meetings to brief staff on guest profiles, menu updates, service expectations, and preparation requirements.
  • Organise specific trainings for outlet staff and encourage participation in hotel-wide learning and development initiatives.
  • Establish a pool of qualified full-time and part-time employees in coordination with Human Resources.
  • Monitor team performance and identify errors during setup, service, and breakdown, initiating corrective action as needed.
  • Report and document incidents requiring disciplinary action, escalating to the Head of Department as appropriate.

Outlet Operations

  • Maintain cleanliness and organisation of the outlet and its surroundings at all times.
  • Ensure all opening and closing procedures for the outlet are followed diligently.
  • Be thoroughly familiar with the outlet’s concept and ensure all team members understand and deliver service accordingly.
  • Monitor and improve the quality and consistency of service standards across all shifts.
  • Actively participate in menu design in collaboration with the Chef, incorporating market trends and guest preferences.
  • Organise tastings for new dishes and daily specials to ensure consistent quality.
  • Lead the implementation of initiatives aimed at enhancing guest experience and overall satisfaction.
  • Handle guest inquiries and complaints in a courteous, prompt, and efficient manner, and ensure proper follow-up is conducted.

Financial Performance & Reporting

  • Lead the outlet’s financial performance by efficiently managing costs and driving revenue growth.
  • Monitor expenses, reduce spoilage and wastage, and oversee the effective use of operating supplies and equipment.
  • Produce detailed reports and analysis on outlet performance and present findings during monthly performance reviews.
  • Support the preparation of the outlet’s annual budget, forecasting and planning for efficient financial performance.
  • Ensure accurate settlement of all sales and be responsible for outlet floats where applicable.
  • Operate the outlet’s POS system efficiently and ensure all staff are adequately trained on its use.
  • Perform consistent upselling of all products and services offered within the outlet, enhancing average check and profitability.
  • Monitor payroll and implement flexible staffing plans to control labour costs while meeting business needs.

Strategic Development

  • Regularly assess and source the best available products to ensure quality offerings in the outlet.
  • Stay updated with the local dining scene, competitor restaurants, and market trends to ensure the outlet remains relevant and competitive.
  • Promote strong cooperation with the hotel’s suppliers and ensure that procurement aligns with quality and financial expectations.
  • Collaborate with other food and beverage departments for cross-functional efficiency and seamless guest service.

Guest Experience & Brand Standards

  • Be a visible presence during meal periods, interacting with guests, understanding their preferences, and resolving any concerns.
  • Use guest feedback and insights from the Kempinski Experience Survey to continuously improve service delivery.
  • Represent the outlet in various internal and external functions as required.
  • Ensure all brand standards are met and exceeded, serving as an ambassador for Kempinski hospitality.

Additional Duties

  • Act as the Food & Beverage Duty Manager in the absence of the Director of Culinary.
  • Prepare and review the outlet’s operations manual annually and implement necessary updates.
  • Respond proactively to any departmental or operational changes as directed by hotel management.
  • Undertake any reasonable tasks or secondary duties assigned by the Head of Department in line with business needs.

Skills, Knowledge and Expertise Required

  • Minimum of 3 years’ experience in a similar role within a 4-star or 5-star hotel environment.
  • Extensive knowledge and experience in managing Italian cuisine outlets.
  • Proficient wine knowledge, with the ability to recommend pairings and train staff accordingly.
  • Strong reporting and analytical skills with a proven ability to track revenues and monitor financial performance.
  • Excellent communication and interpersonal skills, with a demonstrated ability to lead and motivate diverse teams.
  • Demonstrated ability to operate within a high-performance environment, meeting luxury service expectations consistently.
