Job Description: Kitchen Trainee

Reporting Line

The Kitchen Trainee will report directly to the Training Manager and work closely with the Departmental Trainer. The trainee will participate in learning activities that provide exposure to professional culinary practices, company policies, and operational excellence.

Purpose of the Role

The role of the Kitchen Trainee is to familiarize oneself with the operations of the kitchen department, develop a strong understanding of culinary processes, and contribute to the seamless running of daily activities while upholding the highest levels of quality, hygiene, and safety.

Key Responsibilities

Under the supervision of the Departmental Trainer and Training Manager, the Kitchen Trainee will:

  • Product Knowledge: Gain comprehensive knowledge of culinary products, including ingredients, equipment, suppliers, markets, and current industry trends. This will allow you to stay updated and make informed recommendations to improve kitchen operations.
  • Operational Adjustments: Learn to recommend and support adjustments to enhance kitchen performance and efficiency, ensuring smooth service delivery.
  • Hygiene and Standards: Maintain impeccable standards of personal grooming and kitchen hygiene while strictly adhering to company policies and guidelines.
  • Food Preparation and Service: Assist in preparing, cooking, and serving dishes according to the restaurant’s menu, while mastering presentation and consistency.
  • Workstation Management: Clean, organize, and reset your working area to maintain a tidy and efficient environment.
  • Safety and OH&S Compliance: Adhere to Occupational Health and Safety (OH&S) policies and procedures, ensuring that all tasks are performed in a safe and responsible manner. This includes compliance with fire, first aid, and emergency protocols.
  • Ingredient Preparation: Assemble and prepare fresh ingredients required for menu items, ensuring accuracy and quality.
  • Goods Receiving and Storage: Assist in receiving, checking, and storing goods while ensuring proper stock rotation and maintaining neat storage areas.
  • Cost Control and Waste Reduction: Learn to control costs by minimizing wastage, ensuring efficient use of resources, and following preventive measures to reduce equipment loss or breakage.
  • Team Communication: Foster effective communication and collaboration within the Food & Beverage Department to ensure seamless operations and guest satisfaction.

Skills, Knowledge, and Expertise

The ideal candidate for this opportunity will possess:

  • A Degree or Diploma in Culinary Arts from a recognized learning institution.
  • No prior work experience required—this role is specifically designed for fresh graduates and recent learners.
  • Completion of coursework (even if graduation is pending).
  • Kenyan citizenship.
  • Less than one year since course completion (2024/2025 graduates are encouraged to apply).
  • Strong communication skills with the ability to interact effectively in a multicultural environment.
  • Excellent grooming standards and professional etiquette.
